&lt;p&gt;So, I kind of improvised what I think would go in an enchiladas recipe, and I think I did okay. I’m becoming SUCH a chef. &lt;/p&gt;

&lt;p&gt;Beef/chicken with Mexican blend cheese and creamed corn wrapped up in tortillas. Put the seam side down in dish. &lt;/p&gt;

&lt;p&gt;I didn’t have enchilada sauce BUT I had cheese enchilada flavored soup, so I poured that over top with the rest of the cheese. &lt;p&gt;Crockpot chicken corn cream cheese &lt;/p&gt;

&lt;p&gt;2 chicken breasts, still frozen&lt;br/&gt;
1 can Rotel tomatoes&lt;br/&gt;
1 can corn kernels, do not drain&lt;br/&gt;
1 can black beans, drained and rinsed&lt;br/&gt;
1 pkg. Ranch dressing mix&lt;br/&gt;
1 T cumin (didnt use this)&lt;br/&gt;
1 t chili powder (didnt use this either)&lt;br/&gt;
1 t onion powder&lt;br/&gt;
1 8-oz pkg. cream cheese&lt;br/&gt;

Put the chicken in the crock pot.&lt;br/&gt;
Top with the tomatoes, corn,&lt;br/&gt;
the drained and rinsed beans,&lt;br/&gt;
ranch dressing, cumin, onion and chili powders,&lt;br/&gt;
stir to combine then top with the cream cheese.&lt;br/&gt;
Cook on low for 6-8 hours, stirring one or twice&lt;br/&gt;
 to blend in the cheese.&lt;br/&gt;
Shred the chicken into large pieces&lt;/p&gt;

&lt;p&gt;&lt;br/&gt;
They suggested serving this over rice. I put some in a tortilla with rice, cheddar cheese, and put sour cream and salsa on the outside. Tasty!&lt;/p&gt;

&lt;p&gt;Makes a good bit. This would also make an excellent dip!&lt;/p&gt;

Made instant potatoes, added container of sour cream, cheddar cheese, garlic powder and onion salt. Place in dish. Put dabs of butter on top and remaining cheese. Bake 30-45 minutes. Broil for a few afterward to get the butter to brown the top.&lt;/p&gt;

&lt;p&gt;&lt;br/&gt;
Ingredients&lt;br/&gt;
1/2 cup chopped onion&lt;br/&gt;
1/2 cup chopped green pepper&lt;br/&gt;
1 tablespoon vegetable oil&lt;br/&gt;
4 cups mashed potatoes (prepared with milk and butter)&lt;br/&gt;
1 cup (4 ounces) shredded cheddar cheese, divided&lt;br/&gt;
1/4 cup crumbled cooked bacon&lt;br/&gt;
1 teaspoon salt&lt;br/&gt;
1/2 teaspoon pepper&lt;br/&gt;
Directions&lt;br/&gt;

&lt;p&gt;3 1/2 cups Cheerios toasted oat cereal&lt;br/&gt;
3 cups Rice Chex&lt;br/&gt;
3 cups Corn Chex&lt;br/&gt;
16 ounces M&amp;M’s plain chocolate candy&lt;br/&gt;
2 1/2 cups salted mixed nuts&lt;br/&gt;
2 cups small pretzels&lt;br/&gt;
2 (11 ounce) packages white chocolate chips (Ghirardelli brand preferred)&lt;br/&gt;
Directions:&lt;br/&gt;
1&lt;br/&gt;
Dump the cereals, M&amp;Ms, nuts &amp; pretzels in a large bowl.&lt;br/&gt;
2&lt;br/&gt;
Melt the white chocolate in the microwave or in a double boiler. Melt very slowly, stirring occasionally, being careful not to burn the chocolate.&lt;br/&gt;
3&lt;br/&gt;
Dump melted chocolate over the rest of the ingredients and fold over and over until you have well-coated hunks and chunks.&lt;br/&gt;
4&lt;br/&gt;
Spread the whole mess out on parchment paper and set in a cool place until it sets up, then break it into pieces.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;Ingredients:&lt;/span&gt;&lt;br/&gt;&lt;span&gt;3 lbs raw boneless skinless chicken breasts (the original recipe used frozen breasts, but I used them unfrozen, so it appears you can do either)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;12 oz bottle of Buffalo wing sauce &lt;/span&gt;&lt;span&gt;(I used Frank&amp;#8217;s&lt;/span&gt; &lt;span&gt;Wing Sauce)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;1 oz packet of dry Ranch mix (I used Hidden Valley)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;2&amp;#160;T light butter&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Directions:&lt;/span&gt;&lt;br/&gt;&lt;span&gt;1.    Place the chicken breasts in your slow cooker. Pour the bottle of wing sauce over the top of the chicken. Sprinkle the packet of ranch mix over the top of the wing sauce. Place the lid on your slow cooker. Cook on low for 7-9 hours until meat shreds easily. &lt;/span&gt;&lt;br/&gt;&lt;span&gt;2.    Remove meat and shred it using two forks. Return shredded meat to the sauce and add the butter. Stir to combine. Continue to cook on low for another hour so the meat can soak up the sauce. Serve however you like!&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Yields 12 (1/2 cup) servings.
